If I have several children, can I treat them differently in my will?

If you have several children, you can treat them differently. You can treat anybody differently in your will. I recommend however, that you let the children know what their inheritance is going to be or why you're treating them differently. Because you're opening a case for litigation, if you don't treat them fairly or with-- at least so that they'd understand why you've done what you've done.
